Tomato basil quesadillas

Thanks to a friend of mine, I’ve learnt the delicious things one can do with Balsamic Vinaigrette!

Try this on for size, and it’s real simple to make (healthy too!):

  • 2 sprigs of fresh basil, just the leaves
  • 3 fresh cherry tomatoes, halved or sliced thin
  • Sargento’s Mexican four-cheese mix (grated), or you can just grate mozarella and parmesan on it
  • Some Balsamic Vinaigrette in a bowl, and get out a basting brush
  • Whole-grain tortillas

Brush one tortilla on one surface with the vinaigrette. Spread the basil leaves first, then tomatoes and then sprinkle cheese gratings on top.

Fold into half and set oven to 400F. Toast for 8-10 mins.

Makes a great lunch or dinner!
